Directions: Wash the tomatoes, peel them and grate them. Bring to a boil and cook for 15 minutes till the excess water is evaporated and the mix is like a sauce. Add the eggs, one after the other and mix them with a wooden spoon till the eggs are well mixed with the tomato. You cut the feta in small pieces, add them in the pan and continue to mix with the wooden spoon. Gradually add the olive oil. Take it out of the fire, taste, and add salt and pepper. Tip: If you like the smell and taste of green pepper slice one and add it at the end on top of the dish, once served. “Kagiana” is one of the really favourites of the Greek family.
