Reddened Rooster Stew with Wine / “Kokkoras Krasatos"
 

Ingredients:                                        


1 kilo minced beef

2 slices bread, trimmed

2 eggs

2-3 tablespoons olive oil

1 small onion, diced

4-5 cloves garlic, minced

1 tablespoon chopped fresh dill

1 tablespoon chopped fresh parsley

1 cup of minced feta cheese

½ kilo of potatoes

Salt and Pepper to taste

4-5 eggs for stuffing

       



Directions:


You mix well the minced beef with the onion, the garlic, salt, pepper, the dill and parsley. Add the trimmed bread and the eggs in the mix till all become a whole.

Meanwhile you boil 4-5 eggs for stuffing.


You prepare the mix in one long rectangular shape. You take the boiled eggs, cut them in two pieces, add in between the feta cheese and them bring them together and place them one next to other on top the mix. Now you place on top of all the rest of the mix and make it look like one long piece of meat. 

Preheat oven to 160C.

Lightly grease a baking or roasting pan. Add the mix in the centre and the potatoes around. Add 1 cup of water and the olive oil and let it cook for 1 hour in 200C.

Check the meat and potatoes regularly.

Cover the pan with foil for the last 15 minutes.


Tip:


You may add mint instead of dill and parsley and you have a different taste!
