Reddened Rooster Stew with Wine / “Kokkoras Krasatos"
 

Ingredients:                                        


1 kilo meat (beef or pork) cut in small pieces

5 tablespoons olive oil

2-3 small pieces of garlic

¼ cup of flour

1 cup of cognac or red whine

1 tablespoon of strong tomato puree

2 cans (250 gr each) of minced tomato

Spices:

1 small piece of cinnamon or 3-4 cloves

3 pieces of black pepper

½ teaspoon salt

½ teaspoon freshly ground pepper



Directions:


Add the oil in the pan to slightly cover it. Fry the garlic and the meat for 10 minutes in high temperature (4/5 out of 6) in the oil. Continue till the meat is turned to brown color and is no watery at all. Add the flour. Add the cognac and stir for 2-3 minutes.

Mix the tomato puree with boiling water in a cup and add it in the pan. Finally add the tomato cans and lower the temperature to 3 (out of 6) and let it cook for 2 to 2 ½ hours with the cover. Do not forget to stir with a wooden spoon every 10-15 minutes. If it is needed add water but only boiled.

15 minutes before being ready add the cinnamon or the cloves. When ready add salt and pepper to taste.


Tip:


This dish may be accompanied with spaghetti or even better with french-fries. For a more healthy approach prefer vegetables- Zucchini is a very good choice that you add in the cooking 15 minutes before it is ready.

The same recipe can be alternated with chicken by it needs only 1 hour for cooking.
