Ingredients:
4 kilos potatoes
4 green peppers
1 can of sliced tomatoes
1 tablespoon of puree tomatoes
2 beef broth cubes
1/3 teaspoons salt
1/3 teaspoon freshly ground pepper

Directions:
Wash the potatoes, peel them and cut them in big rounded pieces. Cut the green pepper in small pieces and along with the potatoes you let them boil in a pan in high temperature for 10 minutes. Mix the puree tomatoes and the broth cubes in a glass of hot water, till they blend well.
Add the puree tomatoes and the slices tomatoes in the pan and let it cook for another ½ hour in medium heat (3 out of 6).
When done, take it out of the fire, add the oil, salt and pepper. They are ready to be served.
Tip:
The key for the full tasting of the “Patates Giaxni” is the pepper & to try them while they are “almost” hot.
