Directions: In a pan we pour half of the oil and we sauté the chopped spring onion over high temperature for 8-10 minutes. Add the spinach and carrot and continue to stir. We add the tomato and we let it boil for 15-20 minutes. We then add the rice and we let it boil in medium heat for extra 15 minutes. Add water only if it needs a few more minutes to be cooked. Once ready add the remaining oil and let it for 10 minutes before served Tip: You could try a variation with no tomato and carrot.
