Ingredients:                                        

1 ½ kilo of shrimps

1/4 tablespoons of butter

1 onion, sliced

1 carrot, sliced

1 green pepper, cut in pieces length wide

1 kilo of tomatoes

250 grams of feta cheese

300 grams of kasseri cheese or gouda cheese

4 tablespoons of parsley

½ teaspoon salt

½ teaspoon freshly ground pepper



Directions:


Clean the shrimps well, remove the cover and the head and dry them well.

Boil them in two cups of water for 10 minutes, keep the water aside and drain the shrimps well.

Sautee in a pan (5 out of 6) with butter the onion, the green pepper and the carrot. Add the tomato and the boiled water and let it boil till the sauce is firm in medium heat (3 out of 6).

Once ready pull it from the heat, add the feta, and the parsley.

Place the mix in a baking pan, cut the kasseri (or gouda) in thin pieces and place the shrimps on top. 

Preheat the oven in 200C.

Let them cook for half an hour at 180 C.

Serve it warm and add salt and pepper to taste.

A light dish that can be served as a starter or with rice on the side as main dish
