Ingredients:                                        

4-5 slices of salmon

1 kilo of potatoes

3 onions

1 green bell pepper

2-3 fresh green onions

1 can of minced tomatoes

2 teaspoon of oregano

1/2 cup virgin olive oil

½ teaspoon salt

½ teaspoon freshly ground pepper

1 cup of water



Directions:


Preheat oven to 180C.

Clean and cut in pieces the potatoes. You spread salt and pepper and you place them in a pan. Place on top the slices of salmon. Add the oregano, the sliced green bell pepper, and the tomatoes all over the pan. You add ½ cup of olive oil and 1 cup of water and cook it for 1 hour in 200C.

Check it regularly and add water if needed.

Serve it warm.


Tip:


A summer light dish different than the original ways of cooking Salmon, served with pepper and ideally is accompanied with Greek salad.
