Ingredients:
1 rooster cut in pieces
2 medium onions, chopped
2-3 tablespoons of fresh butter
2 green pepper, chopped
2 cloves garlic
1 piece of cinnamon
2 cloves
salt, pepper
1 glass dry white wine
1/3 of cup virgin olive oil

Directions:
Clean the rooster and let it dry. Cut in pieces and cover them with flour and sauté in a pan with the fresh butter.
Add in other pan the oil, and fry the pepper, the garlic and the onions for 2-3 minutes in high temperature (5 out of 6). After add the rooster and mix them for 2-3 minutes till all get a brownish colour. Add the wine, the cinnamon and the cloves and let it cook for 1 hour in medium temperature (3 out of 6).
Add water if necessary and stir every 10-15 minutes with a wooden spoon. It is ready when rooster is cooked and sauce is firm.
Tip: This dish is served with spaghetti number 4, or French fries dipped into the sauce.
