Ingredients:                                        


4 lamp legs

1 ½ kilo of potatoes

2-3 lemons juice

1/2 cup of olive oil

1/3 cup of water

½ cup thyme, chopped

1 piece of garlic

2 teaspoons of salt

1/2 teaspoon of pepper

       


Directions:


Preheat oven to 180C.

Rinse the lamp legs and pat dry. Peel the potatoes and cut into quarters, lengthwise. Salt, pepper and add lemon to the lamp and potatoes. Transfer the lamp to a roasting pan, and add potatoes, on and around it.

Add garlic, olive oil, and lemon juice distributing evenly across the pan. Add water, foil on top and bake at 180C for a total 2 hours. 15 minutes before it’s over, take the foil out and add the heat to the grill so that the lamp and potatoes get a roasted look. Add the thyme as well.


Tip:


Check periodically to make sure there is still a little water in the pan. If needed, add 1/4 to 1/2 boiled water and some extra lemon juice.

This food is ideal with Greek salad and fresh bread.

You could try it with grated ‘kefalotyri” or parmesan cheese.
