Giant White Beans/"Gigantes"
Broad Beans
Chick Pea
Artichokes
Green beans in tomato sauce
Peas with Olive Oil and Tomato
 

Ingredients:                                        


½ kilo of frozen green beans

3- 4 potatoes

2 carrots

½ can of peeled tomatoes

1 onion, thinly sliced

1 cup of parsley

3 pieces of pepper

1 cup of water

1/4 cup of virgin olive oil

½ teaspoon salt

½ teaspoon freshly ground pepper



Directions:


Heat half of the oil in a pan in high temperature (5 out of 6) and sauté the onion and the half of the parsley for 2-4 minutes. Add the green beans, the potatoes and the carrots and you continue to stir for extra 5-10 minutes in high temperature.

Add the tomato, salt and pepper and continue to stir for extra 5 minutes. 

Add the boiled water, lower the temperature to 3 and let it cook for an hour. When ready remove it from heat and add the remaining oil and parsley.

Let it for 10 minutes covered and is ready to serve.


Tip:


As the sauce should be thick, check it every 15 minutes and boost the temperature at the end so that the excess water is evaporated.


You may serve this dish with feta cheese and fresh bread.
