Giant White Beans/"Gigantes"
Broad Beans
Chick Pea
Artichokes
Green beans in tomato sauce

Ingredients:                                        


2 kilos giant beans,

2 cups of virgin olive oil,

3 medium sized onions finely diced,

1 piece garlic,

3-4 ripped tomatoes,

½ cup thyme,

2-3 tablespoons parsley, finely chopped,

2 sausages,

½ teaspoon salt

½ teaspoon freshly ground pepper



Directions:


Soak the giant beans in water overnight. The following day rinse the beans, drain through a colander and place them in a pot with water. Let them boil for about an hour. Strain the beans again and place them in a pan or Pyrex dish.

Heat the oil in a pan and sauté the onions. Add the finely diced tomatoes, the garlic, the thyme, the parsley, the sausages cut in thick slices, add some boiled water. Add salt and pepper and let them cook for about 10 minutes in medium heat (3 out of 6). Then pour this sauce on the giant beans you previously placed in a pan or Pyrex dish.

Bake in  180 C degree oven for about 35 minutes.


Tip:


A delicious dish that can be used as a main dish or as a starter. You may add a few drops of lemon on individual serving for help the digestion. Also, can be served with feta cheese.
