Gentil Soup
Bean Soup
Fried Zucchini (courgettes) / Eggplant
 
 

Ingredients:                                        


250 gr. of small lentils carefully cleaned! 

1 can of ripe tomatoes

1 onion cut in pieces

2 pieces of garlic, finely chopped

2 bay leaves

1 piece of rosemary

1 cup of olive oil

½ teaspoon salt

½ teaspoon freshly ground pepper

3 cups of water



Directions:


Once you clean the lentils, you rinse them thoroughly with warm water.

You put them in a pan with the water; add the onion, the garlic, the bay leaves and the rosemary and boil them for half an hour at medium heat (3 out of 6). After half an hour you add the tomato and the salt. If extra water is need add it but only after you boil it separately. You let it boil for an extra hour.

Once ready you remove it from the heat and add the oil and pepper. Let it for 10 minutes and is ready to serve


Tip:


This dish is very nicely served with French fries and also it tastes perfectly with vinegar.
