General important tips:


-Always cook with a wooden spoon


-Sauté always at high heat 5/6 (out of 6)


-All “Ladera” dishes you should add the olive oil after you finish cooking and while the food is boiling. Leave it for 5 minutes and then serve. By this way you avoid to boil the olive during the cooking process which it saturates and is bad for your health!

-Salt and pepper to be added always at the end of the cooking (similar to oil)


-While cooking, if you need to add water, always add boiled water (the warm water slows down the cooking process and destroys the overall taste of the food)


-When cooking meat always clean it very well with warm water and let it dry well before you start cooking it as the additional water destroys the taste


-Regularly check the food while cooking, as most of the recipes need to be stirred many times in order the ingredients to be well mixed and melt together


-In all dishes of legumes (pulses) always add drops of lemon (more or less based on your taste) as it helps the digestion


-Seasonal: Keep it Fresh: Fresh ingredients are part of almost every dish, so maybe you will need to do your shopping the previous day, especially for the herbs


-Slow: Don't Rush It. When the food cooks slowly, tastes have time to meld, creating your mouth-watering dishes. Instructions are given for the heat of every dish, still you may need to adjust it on your appliances dynamics as it varies from model to model and from country to country.


-Once you familiarise yourself with the recipes, feel free to play around with the herbs: add or delete some herbs you like or dislike.
