Ingredients:
1/2 kg whitebait
Flour for coating
½ teaspoon salt
½ teaspoon freshly ground pepper
1/2 cup olive oil

Directions:
Wash the fish well. You do not need to clean them (no need to no need to cut the head). Salt the fish. Heat the oil in a pan. Coat the fish with flour and fry them until golden brown. Add ground pepper and a few drops of lemon and serve hot.
Tip:
This is a perfect summer lunch dish that is greatly accompanied with stewed vegetables of your preference.
