Directions: Beat the butter with the sugar until stiff and then add the eggs and the vanilla. Mix in a glass the brandy, rum and ammonia. Mix in a glass the milk with the baking soda Cut the almonds in a blender In a separate bowl (quite big) we pour all the liquids (alcohol, milk, rosewater) and the almonds and slowly we add the mix of butter/sugar/eggs. Once all whisked well you add the flour (koskinimeno) and continue to whisk. The whole mix needs to be soft (sticking in your hands). Cover it with a cloth and let it for 10 minutes. Place it in a big surface and start folding it, first in 4 pieces and then in 8. While folding it add to the mix a few drops of olive oil. Place it in the baking pan, but keep a small portion for the creative drawings. Here is the creative part (see also below actual grandma’s drawings): Add a hole in the middle and insert a small ball of the mix and add in there a red egg. Then take a scissor and start cutting the mix as shown in the drawing. Then take some flour and add water, so to make a hard mix. With this mix you will create the different shapes (as shown in the drawing 1): grape, bird (you use a glove to make the mouth), two pears, and any other shape you may like. At the end you insert the rest of the red eggs, and add a cord around every egg, in a circle shape. Once finished you cover the eggs with foil so that they will not break while baking (as shown in the drawing 2). You bake it at the bottom of the oven, placing on top of your pan for grill, for 45 minutes at 190 C. When ready you take it out of the oven and immediately you pour the honey all over it. Tip: It is a delicious cake, that really worth the time to prepare it. Even if it is a traditional cake for a purpose, my grandma was always preparing one in Easter just for her grandchildren!
