Ingredients:
250gm dried chickpeas
3 tablespoons of olive oil
1 onion whole
1 big piece of garlic - crushed
2-3 tablespoons of fresh basil
½ teaspoon salt
½ teaspoon freshly ground pepper
1 lemon juice
1/3 teaspoon of bicarbonate of soda

Directions:
Soak in warm water the chickpeas overnight or a minimum of 8 hours, with a pinch of bicarbonate of soda. Wash and put in a big pan and cover with fresh warm water.
Bring to the boil for at least two hours.
When the chickpeas are ready, drain and cover with new warm water and add the onion, garlic, and basil, cover and let it for 10 minutes before you serve.
Serve them with lemon juice and pepper.
Tip:
Alternatively you may want to use tomatoes, which you add them 1 hour before they are ready. You may accompany this dish with feta cheese and fresh bread
