Ingredients:
250 grams of beans – preferably Kastorias (Greek city)
4 carrots
1 celery
1 big onion finely chopped
1/3 cup of virgin olive oil
1 can of tomato peeled
½ teaspoon salt
½ teaspoon freshly ground pepper
3 cups of water

Directions:
You clean the beans with warm water and let them dry.
You place beans in 2.5 litres of warm water and put on high heat and boil them for 10 minutes. You remove them from the heat and place them in a colander and let them dry for 5 minutes.
You add again 3 cups of water in the pan; add the beans and the onion and you let them boil for ½ an hour in medium heat (3 out of 6). Then you add the celery, the tomato and the pepper. Continue to cook for an extra ½ an hour.
When ready you remove from heat and add the oil and salt.
Tip:
Serve with wholegrain toasted bread. For an absolutely complete meal accompany soup with olives, feta cheese and sardines. This is an easy and very healthy dish that is widely used in Greece especially during the fest period before Easter.
