This is it: Baked feta cheese
Ingredients:
250 grams feta cheese
½ tomato
½ green pepper
1/2 tablespoon of virgin olive oil
1 teaspoon of oregano
1/3 teaspoon salt
1/3 teaspoon freshly ground pepper
Pieces of aluminium foil
Directions:
Cut pieces of aluminium foil and place on each of them a piece of feta cheese (not too thick).
Dredge oregano over the feta cheese, add some drops of olive oil and fold the aluminium pieces.
Place all of them in a baking pan that you have previously brushed it with some olive oil.
Bake in preheated oven for 15-20 minutes.
Tip:
Just 3-5 minutes before ready cut the pepper and add it in the feta, It will take a very refreshing taste. I highly recommend it as a side dish for most of the Greek dishes.

Ingredients:
6 eggs – separated
5 apples, peeled and grated
500 grams sugar
500 grams flour
1 pack (250 grams) butter
1 glass of milk mixed with orange juice
Zest of 1 orange,
1 teaspoon of vanilla extract
2 teaspoons of cinnamon
Directions:
Preheat oven to 200C.
The fruits: we clean the apples and we cut them in rounded pieces. We butter a baking pan and we place the pieces of the apples by adding one glass of water, ½ glass of sugar and the cinnamon.
The mix: in a large mixing bowl, you whisk the butter for 2-3 minutes. We add the rest of the sugar, the eggs one by one, vanilla, orange, the milk and at the end the flour.
Once the mix is ready we pour it over the apples. Bake at 200C for one hour or until a knife inserted into the centre comes out clean.
Tip:
Try to find the freshest apples possible.

Octopus/So cool for the weekend!
Ingredients:
2 kilos of octopus
1 cup of olive oil
2 cups of red dry wine
4-5 small tomatoes, chopped
½ teaspoon salt
½ teaspoon freshly ground pepper
3-4 bay leaves
Directions:
Clean the octopus and cut it in small pieces.
Put the water into a pan and bring to a boil. Add the octopus and boil it till the water is evaporated, remove it.
In another pan fry the olive oil and sauté the octopus for 5-10 minutes in high temperature (5 out of 6). Add the wine, the tomatoes and stir for 5 more minutes.
Lower the temperature to 3 (out of 6) add the bay leaves and let it cook for ½ an hour till octopus is tender and sauce is firm.
Tip:
This dish is very well accompanied with French fries and Ouzo You can have it as a starter with bread.

Tzatziki/The Ultimate Classic
Ingredients:
500 grams of Greek-style yogurt
2 cloves garlic,
1 medium cucumber
1 tablespoon red dry wine or vinegar
1 tablespoon virgin olive oil
1/3 tea spoon salt
1/3 tea spoon pepper
Directions:
Peel the garlic cloves and cut off the woody ends. Crush the cloves as best as you can. You can mince the garlic with a knife, rub it with the tings of a fork, or run it through a garlic press. Peel the cucumber.
Split the cucumber in half (cut crosswise) and then again along the length of the cucumber to expose the seeds. A teaspoon or similar can then be used to scrape out the seeds. Cut up one half cucumber into small strips. Take the chopped up cucumber and squeeze it (to take out any extra liquid); the easiest method is to squeeze it in your fist.
Add the drained cucumber to the garlic. Mix the garlic, cucumber, olive oil, and vinegar or red wine together. Put the yogurt in a bowl large enough to stir in the garlic and cucumber mixture and add the garlic and cucumber mixture to the yogurt.
Stir until everything is evenly distributed in the yogurt. Stir in salt to taste. If you prefer the taste not to be very strong then you serve immediately otherwise you need to refrigerate for a day, as the garlic flavour permeates the thickened “tzatziki”.
Tip:
Maybe seems complicated but really worth to try it….just have in mind that it is one of the basic ingredients of the “Souvlaki pita”.
Do not forget that whenever you use cucumbers, cut a little bit and taste it before adding it to a recipe as it needs to be crunchy and fresh. If a cucumber is old or not good quality, it can taste bitter instead of slightly sweet and refreshing. Using a cucumber like that can ruin a recipe pretty

Fried Potatoes with Eggs
Ingredients:
4 potatoes
4 eggs
1 cup of virgin olive oil
1/3 teaspoons salt
1/3 teaspoon freshly ground pepper
Directions:
Wash the potatoes, peel them and cut them in thin long pieces. Pour the oil in a pan and fry the potatoes.
Mix the potatoes every 2-3 minutes so to avoid sticking in the pan. Once ready put them in a plate where you have previously placed an absorbing kitchen towel, in order to capture excess oil.
Add in another pan ½ teaspoon of virgin oil and add the eggs. Mix them well with a wooden spoon. Once cooked add the potatoes and mix them well.
Take it out of the fire, taste, and add salt and pepper.
Tip:
You can also add sausage in this recipe, that you cook them in the same oil of the potatoes for 2-3 minutes and add them along with the potatoes in the eggs. This dish is one more of the fast and delicious everyday meals of the family.
Greek Salad
Ingredients:
3 tomatoes cut into wedges
1 green pepper cut into slices
1 cucumber peeled and sliced
1 onion sliced in thin rings
7-9 green or black olives
1 tablespoon oregano
4 tablespoons of “virgin” olive oil
1/3 of tea spoon salt
1/3 of tea spoon pepper
250 grams of feta in one piece
Directions:
Cut first the tomato in irregular pieces and place it
in the serving ball. Cut the cucumber, the onion (in rings) and the peppers and place them on top. Spread the olives in the ball and add the salt and the pepper. Add the piece of feta on top. Spread
the oregano, and finally add the olive oil.
A variation of this salad that my grandma used to do is instead of oregano to use basil. Is very tasteful and gives to the salad a fresher flavour.
